Ingredients

100g rice per person

1tbsp Olive oil

1tsp of curry powder per person

1 onion diced

1l vegetable or chicken stock

1 fillet of smoked fish per person

1 egg per person

5 spring onions chopped

A handful of frozen peas

Remember the beauty of this dish is the versatility. If you have an onion and a half add that, if you have peppers add those.

Super Simple Kedgeree

I like to make sure I have some smoked fish in my freezer for a midweek kedgeree when we're running out of ideas. This simple meal is cheap, easy and full of flavour. Not to mention it is very easily scalable for guests.

Ffor a vegetarian option, you can add a meat substitute and a little smoked paprika.

Method

  1. Place rice in a bowl of cold water to wash
  2. Heat olive oil in a deep frying pan or dutch oven, add the curry powder and mix until combined with oil - you can add a little more oil if necessary
  3. Fry onion until translucent (at this point you can add peppers carrots and other vegetables.
  4. Drain water from rice and give it another rinse. Ideally you want the water to run clear.
  5. Add the rice to the pan and fry so that all the grains of rice are coated in oil and spices
  6. Pour in the stock. the rice should be about 1cm under the surface add more or less water as required
  7. Add your smoked fish and peas then cover the pan, simmer for 10 minutes
  8. Reduce the temperature of the pan. Then either soft boil and peel the eggs or crate a little well in the rice and crack them into the pan. Cover the pan for a further 3-4minutes or until the egg whites are solid
  9. Serve with a sprinkling of spring onions.
