Sautéd mushrooms with whipped goats cheese on toast

Ingredients

120g mixed wild mushrooms

1tbsp butter

2 minced cloves of garlic

15g or a small bunch of parsley

zest of 1 lemon

Juice of half a lemon

Salt and pepper to taste (I like to used smoked salt for this if you have some)

125g soft goats cheese

Good quality fresh bread such as sourdough

Optional mixed salad leaves such as spinach, red lettuce and chard

Sautéd mushrooms with whipped goats cheese on toast

I really love toast. I think there’s nothing better than getting yourself some really good bread and topping it with a real treat. This recipe is really quick and satisfying for a week day dinner and if you have guests for brunch it even looks quite impressive while still giving you time with your guests.

Method

  1. Chop your mushrooms into bite sized strips. Meanwhile heat your butter in a frying pan
  2. Once the butter is hot and melted add the mushrooms and fry for 2-3 minutes.
  3. Add your garlic and mix through well.
  4. Remove the stems from your parsley and finely chop. Add half to your mushrooms along with half the lemon zest.
  5. Fry for a further minute or so and then turn off the heat and season to taste.
  6. At this point start toasting your bread.
  7. In a mixing bowl add the goats cheese the rest of the parsley and zest and the lemon juice and whisk until fluffy.
  8. Spread the whipped cheese on to a the slices of toast and sprinkle over the mushrooms. Serve with a side salad.
