Ingredients

300g Short grain/ sushi rice

300g salmon or tuna

1 avocado

2 Tbsp dark soy sauce

Juice 1 lime

2tbsp sesame oil

2tbsp sesame seeds

1/s cup Edamame beans

1 carrot

1/2 cucumber

2 spring onions

Salmon and Mango Poke Bowl

Simple but impressive, Poke Bowls have become a social media sensation with their bright fresh ingredients.

They involve very little more than some chopping but they look beautiful! Just make sure your fish is nice and fresh.

Method

  1. Place rice in a bowl of cold water to clean
  2. Chop fish and avocado into bite-sized pieces
  3. Mix the soy sauce, sesame seeds, lime juice and sesame oil in a bowl or jar and mix (or shake). Add the fish and place in the fridge for around 20 minutes but the longer the better
  4. Rinse rice in cold water until the water runs clear then place in a medium saucepan. Add enough boiling water to cover the rice by about 1cm. Place a lid on your pan and allow the water to come to the boil and then let it simmer for 15 minutes
  5. Chop the carrot, cucumber and spring onion into thin bite-sized pieces.
  6. When you return to the rice after 15 minutes there shouldn’t be any water left. If this is the case serve the rice into the dishes. Otherwise, remove the lid and allow the rice to cook on a low heat until there is no more liquid in the pan
  7. Add the vegetables to the bowl, followed by the pieces of fish
  8. Drizzle the rest of the sauce from the fish over the top and serve
