Piña Colada Smoothie

Ingredients

1/2 cup chopped banana

1/2 cup chopped pineapple

1 cup coconut drink

1 cup icecubes

I love a Piña Colada its a delicious treat and if you're a vegan coconut drink is a great source of B13 - just check the label. For this recipe you will need a blender then all you have to do is remember to freeze your fruit ahead in icecube trays. I like to use the large silicone kind that way my sliced overripe bananas and pineapple are ready whenever I need it. Once the fruit has frozen solid it can be stored in jars in the freezer freeing up the trays for other things.

Method

  1. Ideally, you want to slice your fruit and freeze it overnight in ice cube trays. The ice cube trays should ensure your frozen lumps of fruit are small enough to blend. - You can skip this step but you may find you need more ice to get your smoothie really thick -
  2. Add all your ingredients into a blender and blend on the ice setting if you have one. Otherwise, you can use the pulse setting or blend for short periods- this allows the ice to break up without damaging your machine.
  3. Optional - add a measure or two of rum and pulse again for a boozy treat.
  4. Pour into cocktail glasses and serve with a reusable straw
