Ingredients

2 chicken thighs

Pinch black pepper

1 tsp vegetable oil ( or whatever cooking fat you use)

1/4tsp grated ginger

1 shallot (or 1/4 onion) diced

1tsp tomato purée

1/4 tsp coriander

1/4 tsp turmeric

1/4 tsp cumin

200g chopped tomatoes

100ml water

5tbsp Peanut butter (this one is the best I've found its 100% peanut, no added salt or sugar)

2-4 tbsp prune purée (or sweeten to taste)

Optional to serve steamed rice or fingers of naan bread

Baby Peanut Chicken

Remember to always gauge your babies tastes. You can make this milder by adding more tomatoes or some milk and make it sweeter by adding more prune purée.

I like the nutrinija blenders for baby food. Using a cup blender reduces the cleaning up and makes sure the food is near the blades when you’re only working with small amounts. I decided not to get a baby-specific blender as I've had one like this for about 6 years and it still works really well.

Method

  1. Season the chicken with the pepper and fry in the oil until lightly browned
  2. Add the ginger, onion and spices and fry until fragrant 2-3 minutes.
  3. Add the tomatoes, water, peanut butter and prune purée
  4. Simmer for 20 minutes or until the sauce is thick and well combined
  5. For a young baby, you can blend until smooth, you might need to add a little water. For older babies shred the chicken. If you’re doing baby lead weaning you can make the chicken and sauce separately and serve strips of chicken with the peanut sauce as a dip.
  6. Makes roughly 6-8 portions of 3-4tb. Freeze in portions or serve once cooled.
