One pot tandoori lamb chops and rice

Ingredients

4 tbsp tandoori paste

4 tbsp olive oil

4 lamb chops

1 onion diced

2 peppers roughly chopped (I use one red one green but use your favourites or whatever you have)

100g rice, any long grain rice will work ideally if you know your making this put the rice in a bowl of water to wash all day

600ml water

1 stock cube (lamb is ideal but don’t worry about buying it especially, beef or vegetable work well too)

Optional - to serve

Lettuce shredded with cucumber and lemon juice

Yogurt

One pot tandoori lamb chops and rice

This is barely even a recipe you just fry up the ingredients add some stock and wait ten minutes. Tada dinner!

Method

  1. Heat your oil in a pan and add the tandoori paste. Brown the meat and onions in the paste and oils then add the peppers
  2. Once the peppers are soft rinse the rice (ideally you want the water to run clear) and add it to a pan. Make sure all the grains of rice get coated in the paste and oil
  3. Add the water and scrape the bottom of the pan with a silicone spatula to deglaze. Add your stock cube and mix until displaces.
  4. Bring to the boil then reduce to a simmer and cover with a lid.
  5. Allow to simmer covered for 10 minutes
  6. The water should have all been absorbed, if not cook for a little longer with the lid off while mixing.
  7. Serve as is or add a light salad with lemon juice and a spoon of yogurt.
