Ingredients

330g Oats

210g Plain Flour - ideally organic

50g Brewers Yeast

30g Ground Flaxseed

1/2tsp Baking Powder

1/2tsp Bicarbonate Soda

1/2tsp Ground Cinnamon

1/4tsp Salt

175g Unsalted Butter

70g Coconut Oil

290g Unrefined Sugar or Coconut Sugar

1 Large Egg and 1 Egg Yolk

2tsp Vanilla Paste

150g Dark Chocolate Covered Cranberries

Oat Lactation Cookies

Lots of lactation cookies recipients I’ve found are from the US so I’ve had a play and developed a UK recipe (using scales not cups). Some of the ingredients are a little specialist as they are health supplements but you should be able to find them at your local health food shop or you can use my Amazon links in the ingredients list.

These are delicious cookies that you can share with the whole family. Ideally, bake them before the baby comes then they can be frozen and thawed when needed. I find them most useful when surprise guests show up or when the baby won’t stop crying and its1 pm and you haven’t managed to have any breakfast yet.

Method

  1. Preheat oven to 170c
  2. Combine all the dry ingredients (oats, flour, yeast, flaxseed, baking powder, bicarbonate, cinnamon and salt) apart from the sugar in a bowl
  3. In a separate bowl whisk together butter and coconut oil until combined
  4. Add egg and vanilla and continue to beat with a whisk until combined
  5. Continuing to mix add the sugar and whisk until pale
  6. Gradually add in the mixed dry ingredients
  7. Carefully fold in the chocolate making sure not to break up the pieces
  8. Chill for 15 minutes
  9. Using an ice cream scoop space roughly 3cm app art on a baking tray
  10. Bake for 15 minutes or until golden at the bottom of the oven
  11. Remove from the tray - they will be very soft until they cool down, make sure they have cooled completely before storing
