Ingredients

Olive oil

3 or 4 onions chopped

6 cans of chopped tomatoes

1 pack passata

4 large cloves of garlic, chopped

Large bunch of basil

1l water

2 stock cubes

1/4 cup sugar

300ml cream

Salt and pepper to taste

Easy Batch Cook Tomato Soup

I'm not sure how many it feeds because we've never finished it all in one go, but I would guess around 16 people as it yields about 4 litres of soup. i find it’s the perfect batch cooked meal for lunches all week. This soup can also be used as the base for tomato sauces for pasta or pizza during the week. I like to store leftovers in glass bottles so you can pour out a portion at a time - just be sure to allow the soup to cool before bottling

Method


  1. Fry onions in olive oil
  2. Place in blender with 2 cans of chopped tomatoes and blend until smooth
  3. Pour into a large pot or slow cooker
  4. Fry chopped garlic
  5. Add to blender with 2 cans of chopped tomatoes and blend until smooth
  6. Add to your pot
  7. Add a bunch of basil (including stalks) to blender with remaining cans of tomato and blend until smooth
  8. Add this, the water, stock cubes and sugar to the pot.
  9. Simmer for an hour or turn slow cooker to low for 4 hours
  10. Once cooked allow to cool a little stir in cream
  11. Season to taste
