Bacon Avocado Salad

Ingredients

4 tbsp olive oil

6 rashers of streaky bacon

200g of mixed salad leaves such as rocket and spinach

1 granny smith apple, large dice

1 avocado, large dice

75g Castello blue, or similar soft cheese, rough cubes

1 lemon juice and zest

salt and pepper

a handful of crushed walnuts each

optional - croutons

Bacon Avocado Salad

This salad is definitly not what comes to mind when most people think salad. Its super indulgent and packed full of flavour. Try adding grains, such as quinoa, to bulk out the meal and feed a family.

Method

  1. Heat the olive oil in a frying pan and cook the bacon until crispy
  2. Once the bacon is cooked pour the oil from the pan into a jar and allow to cool
  3. In two bowls split the leaves, apple, avocado and cheese. Cut the bacon into bite-sized strips and add this too.
  4. To make the dressing, add the lemon juice and zest to the jar with the oil and give it a shake. Try a little and season to taste.
  5. Pour the dressing over the rest of the salad then sprinkle with walnuts.
