Ingredients

120ml rice wine vinegar

1/4 cup sugar

1/4 cup salt

1/2 cabbage finely sliced

2 carrot peeled halved and finely sliced

2 chilli finely sliced

10 radishes finely sliced

5 cloves of garlic finely sliced

roughly 30 Pepper corns

Asian Style Pickled Vegetables

Pickled vegetables are delicious side to go with all sorts of dishes. Their tangy crispness is the perfect compliment to fried dishes from spring rolls and stir-fries to burgers and hot dogs.

Method

  1. Mix vinegar salt and sugar in a glass jar. Shake until sugar and salt has dissolved - if this is taking a while you can add a little warm water
  2. Divide liquid and the rest of the ingredients between two jars
  3. Top up with cold water, replace lid and shake
  4. Leave in fridge at least overnight and up to a few weeks if you steralise your jars first.
